Ashes & Diamonds

Ashes & Diamonds Winery is a love letter to Napa Valley as it was when it took the world stage in the 1960s, revealing itself, along with Santa Cruz, as a geological wonderland capable of world-class wines.

Located at the gateway of Napa Valley, along its main artery, Highway 29, Ashes & Diamonds Winery’s mid-century approach extends to its architecture. As an homage, the iconic zig-zag roof and portholes are a few of the iconic references to the heritage of California mid-century modern design, seamlessly integrated with a state-of-the-art wine production facility surrounded by light, airy landscapes and playful, rolling berms.

Ashes & Diamonds Winery is the ultimate convergence of modern and old-school flavors, committed to offering a wide-ranging group of wines that adhere to an ethos of light-handed winemaking and transparency of terroir.

They are the winemakers, and the the dreamers of dreams.

Electric Rose Wine Co.

Electric Rosé is striking down conventional consumption methods by creating the first ever, single-serve pouch…with a straw. Intentionally ironic with a hint of nostalgia, Electric Rosé chills quicker than cans or bottles, packs flat, is environmentally kind and deliciously fun!

Infinite Monkey Theorem

Dangerously drinkable and ridiculously good. Isn't it more fun to just crack open a can? It is the job of our team to create order out of this inherently chaotic system as we craft our ridiculously good wine.

When we started the winery, we decided to focus on the variables that really mattered: using the best grapes, harvesting them at their peak, nurturing each batch of juice as it became our wine, and getting to know the people who drink it. We also decided to get rid of the variables that don’t matter: the vineyard location, the rolling hills, and the tasting room covered in granite and marble.

We make our wine in a 15,000 square foot urban winery in the River North Art District of Denver.  We source our grapes predominantly from the Western slope of Colorado and the results are top notch, well-respected deliciously accessible wines. Sometimes we even put them in cans. Yes, wine in a can.

The locale of the winery promotes urbanity and social-mindedness, both giving the winery access to the city and the city access to the winery. Because The Infinite Monkey Theorem believes the culture surrounding the winery helps define the wine’s quality, the winery takes its position and influence in the local Denver community very seriously.  The wines are not only expressions of the local fruit, the process, and the personality of the winemaker, but also expressions of the people drinking the wine. It is a product born out of the community and thus representative of the community.

Jenny & Francois

We present the wines of small vineyards in this competitive worldwide market, in order to defend an endangered species — winemakers who work like artisans, crafting a different wine each year. They do not impose a preconceived taste on their wines, but look to be surprised by what nature gives them — natural wines.

Natural wines are low-tech or no-tech. These are handmade wines in the truest sense from a group of passionate winemakers that go one step further than organic and biodynamic producers by using organic methods in the cellar as well as in the vineyard — meaning no laboratory yeasts, enzymes, sugar, artificial concentrators, acidification, or sulfites are added during fermentation, and the wines are aged and bottled without stabilizers, or excessive filtering or sulfites.

Equally important, these grower-producers take special care to reduce yields, handpick the grapes, avoid pumps or other rough treatment of their harvest, and plow the earth between the vines, which forces the roots to dive down deep in a thirsty search for terroir.

Natural wines, pure wines, real wines, wines from the terroir, complex wines, wines for thirst!

This philosophy of winemaking differentiates these wines from the all too common taste of technology-driven wines, and offers us what wines should — mystery, romance, and adventure!

We created Jenny & François Selections in 2000. We distribute our wines in New York ourselves, through USA Wine Imports. We also work with fabulous distributors in other states across the USA. We feel close in philosophy and goals to movements such as Fair Trade and Slow Foods, as well as environmental movements. Our hope is that Jenny & François Selections helps passionate winemakers, who respect the environment and high standards of quality, to continue what they do by bringing their wines to the United States. We love to educate about natural wines, and share our excitement for these wines with passionate wine professionals and individuals across the US.

Koval Distillery

CHICAGO'S FIRST DISTILLERY SINCE THE MID-1800s

Established in 2008, KOVAL produces organic whiskey, liqueurs and specialty spirits in Chicago's first distillery since the mid-1800s. Founders Robert and Sonat Birnecker, chose to leave their academic careers to bring the distilling traditions of Robert’s Austrian family to America. In making this decision, they vowed to make organic spirits from scratch (avoiding the common industry practice of purchasing and bottling pre-made spirits) and to change the way people understand whiskey by creating a new, signature style - using only the “heart” cut of the distillate - affording a brighter, cleaner take on whiskey.

Embracing the grain-to-bottle mentality, each step of the spirit-making process is thoughtfully monitored: beginning with contracting local farmers to grow the grain, to on-site milling and mashing, to finally distilling, bottling, and packaging. After numerous international awards and Robert at the helm of consulting for the burgeoning craft industry, KOVAL has grown to be one of America’s leading small batch, independent spirit manufacturers.

THE BLACK SHEEP OF WHISKEY

The name Koval means "blacksmith," in numerous Eastern European languages, but the word in Yiddish also refers to a "black sheep" or someone who forges ahead or does something new or out of the ordinary. Sonat's great-grandfather earned Koval as his nickname when, at the ripe old age of 17, he surprised his family and emigrated from Vienna to Chicago in the early 1900s to start a business. Coincidentally, the surname of Robert's grandfather (at whose side Robert learned the art of distilling) is Schmid - German for "smith." Sonat and Robert chose the name Koval to honor both men - and to reflect their own extraordinary decision to leave their careers to make some of the most unique whiskey in America.

All of KOVAL's whiskies are "single barrel" expressions and aged in 30 gallon charred barrels (113,55 Liters). This insures that the distillate, made up solely of the heart cut, is able to develope its flavor with the purest grain notes and luscious flavor. The term "single barrel" refers to the fact that the bottles come from specific barrels and are numbered accordingly. All KOVAL spirits can be traced back to their barrel, and even the specific shipments of raw materials that come from our organic farmers.

Lolea Sangria

Sangria is a traditional popular drink in many Spanish towns; it is an integral and part of the country's tourist attraction, specially in summer because it is a refreshing drink, synonymous with beach, sun, and a nice beach bar. Each household in Spain has its own sangria recipe and in Casa Lolea we have our own secret blend, fully artisan, a perfect combination of wine and fruit with a frizzante touch.

Sangria can be prepared red or white wine, the latter being known as Clarea. Our handcrafted sangria is all natural. It is synonymous with social gatherings, celebration and joy. The perfect refreshing drink for parties and gatherings, with friends and family gathered around a large glass of chilled Sangria, Lolea brings a sophisticated touch with style and taste.

HUNTER STONE GAMBILL

DISTILLER | CIDER/MEAD/TACO MAKER | SCOOTERER

Hunter studied culinary arts and attended undergrad at Oklahoma State and the University of Nevada Las Vegas before becoming an assistant food and beverage manager of three casinos in Nevada.

Shortly after turning 22, Hunter got married and moved to the Willamette Valley in Oregon, where he went to grad school and served with AmeriCorps as a Youth Volunteer Coordinator. While in grad school, he learned winemaking, brewing, and distilling. He wrote his thesis on mead (honey wine).

Without money to start a booze-making venture of his own, Hunter and his wife moved overseas; first to Guatemala where he worked for a small brew-pub, and then to work as a teacher at an international school in China. Hunter became a principal and later the vice president of an international education company.  He also served the US Embassy in China as a consular warden for a year.

In June 2017, after 11 years out of state and 8 years overseas, Hunter moved back to his home state to start Oklahoma Distilling Co. Hunter is also the founder of Local Cider, Oklahoma's first cidery, and Angry Bear Mead, which are next door to the distillery.

Pampelonne

It begins with fine French wine from the best regions. These wines are then precisely complimented with fresh, natural ingredients. With keen interest for lively acidity and freshness, our wine cocktails are crafted with brightness and balance in mind.

Pampelonne is inspired by the most sophisticated yet carefree beach in St. Tropez with the same name, and the unique sparkling rosé that people imbibe there. We wanted to share this rule-breaking rosé with our friends in America. Our goal: create a sparkling wine cocktail with fine French wine that was light, crisp, and not so sweet, so you could have a few without feeling heavy. It had to be portable, so you could drink it wherever you wanted, straight out of the can.

Available Varietals

• ROSÉ LIME

• FRENCH 75

• BLOOD ORANGE

• BLACK CHERRY

• negroni

• watermelon
